🌹 One of the most distinctive microlots produced at Kalyancool Estate this year.
Crafted through extended anaerobic fermentation, organic rose gulkand, and our proprietary Mélange Split Roast Technique, Maharani is an experimental microlot that explores a uniquely Indian expression of specialty coffee.
Built around patience rather than intensity, this lot delivers delicate florals, layered sweetness, and a refined spice-driven finish that unfolds gradually with every sip.

Maharani is not a traditional cultured coffee where microbial cultures are extracted directly from rose petals to create highly intense floral characteristics.
For this lot, we used standardized Lalcafé Oro yeast as the primary fermentation culture. Organic rose gulkand was introduced into the anaerobic fermentation environment to contribute additional floral complexity and aromatic compounds.
As a result, the rose character in the cup is elegant and integrated rather than overtly perfumed or dominant.

☕ Bean Appearance Disclaimer
⚠️ Some beans may exhibit slight surface oils despite being roasted at a light roast level.
This is completely normal for this lot.
Only extremely ripe red cherries were selected for processing, followed by an extended 120-hour anaerobic fermentation.
The combination of high fruit maturity and prolonged fermentation may cause certain beans to develop a slight oily sheen even when roasted around first crack.

The two roast profiles are then blended in an exact 50:50 ratio.
The result is a layered cup that combines aromatics, sweetness, balance, and depth beyond what a single roast profile can achieve.
Because of this roast architecture, the beans may appear slightly uneven in colour. This is intentional and reflects the combination of two roast expressions rather than inconsistent roasting.
🌿 The Story Behind Maharani
Produced entirely at our own Kalyancool Estate in Chikmagalur, Maharani began with carefully hand-selected fully ripened red cherries harvested at peak maturity.
Every batch was meticulously sorted, with all green cherries and floaters removed before processing.
The cherries then underwent our Bruised Natural Process, where the fruit was gently beaten and bruised before fermentation. This intentional bruising partially opens many of the cherries while leaving others intact.
The objective is to create multiple fermentation environments within the same lot. The opened cherries allow deeper interaction between fruit sugars, yeast, and fermentation compounds, while the intact cherries preserve structure, clarity, and balance.
This combination produces a more layered and expressive cup than a conventional natural process.
The coffee was then transferred into an anaerobic environment and fermented for an extended 120 hours.
During fermentation, organic rose gulkand sourced from:

🌹 Kapiva
was introduced alongside activated Lalcafé Oro yeast 200g.
Approximately 5 kg of organic rose gulkand was incorporated into the fermentation environment together with activated Oro yeast to contribute floral complexity, sweetness, and aromatic depth.
Following fermentation, the coffee was slowly dried on raised beds to preserve sweetness, clarity, and elegance.
