I was delivered a freshly roasted batch (which was a pleasant experience since I have noever received a bag so fresh) so I had to rest it for a few days (5-6). However I did not really let it rest,(in all honestly) but started brewing it from the day I received it. The experience gave me a wonderful insight on how bean resting after roasting changes the flavour profile and how it develops over time :)
